Here is how to make these yummy little treats for the next time you have some special guests at your house or to have a little treat for yourself because darn it you deserve it!
Ingredients:
5 tbsp. butter
2 oz. unsweetened chocolate
2/3 c. sugar
2 eggs
1 tsp. vanilla extract
2/3 c. all purpose flour
1/2 tsp. baking powder
Cheesecake Layer:
1 pkg. softened cream cheese (8oz.)
1/2 c. sugar
1 egg
1 tsp. vanilla extract
1 c. semi-sweet chocolate clips
Directions:
In a medium bowl melt the chocolate and butter (be careful not to burn - depending on microwave settings I would start with 10 sec, increments - my microwave is 30-60 seconds for this to melt perfectly); Use mixer to beat the mixture once melted to make it thick and smooth. Beat in vanilla, sugar and eggs then combine baking powder and flower to the chocolate mixture until all blended nicely. Spread chocolate mixture into a greased 8 in. pan (I prefer glass- you will be microwaving this so no metal please).
Beat cream cheese until fluffy then add in your eggs, vanilla and sugar making sure mixture is nice and smooth. Spoon cheesecake mixture over the chocolate mixture; take a butter knife and cut through the entire mixture creating a marble-ing effect. Sprinkle the chocolate chip mixture over the cheesecake and chocolate mixture.
Cook uncovered for 8-10 minutes. Again depending on your microwave I would be careful on the exact timing because every microwave is a little different. Your mixture is done once you stick a toothpick in it and the toothpick comes out clean. Microwave it again for 30-60 sec longer. Remove from microwave and let it cool on a rack. Store immediately in the fridge.
