Nothing is better than after a long day and in extreme heat (100 degrees here) to cool down in the evening with these crowd favorite Ice Cream Cookie Sandwiches. I am a big believer in making things simple, easy and delicious - especially with two grown boys (my beau and our roommate). They are always asking for these when I make dinner on hot days so I thought I would share the recipe and different combos I have tried and all have loved!
Ingredients: (serves 6)
12 Cookies (Homemade is best but any GOOD store bought ones work too)
1 Gallon Ice Cream
Spoon and a Knife
Directions:
1. Open box and set two cookie together (there should be a total of 6 piles of two). Place one of the cookies on a clean surface face down. Let the Ice Cream soften and take a spoon and scoop out some ice cream. I prefer Dryers Slow Churned, it seems to work the best. You will have to eyeball this one on how much you would like to eat per cookie. I like mine to be twice the thickness of the cookie.
2. Take the second cookie face up and smash the two together. If there is any ice cream leaking out the sides take a knife and smooth out the sides taking the knife perpendicular to the cookie to even the edges gently. Try not to break the cookie.
3. Set on a tray and freeze them for 30 minutes and serve. I serve mine with different dipping sauces like caramel, hot fudge, white chocolate glaze, strawberry filling and whip cream - it just depends on the cookie and ice cream flavors.
Different Awesome Combinations:
a. Thin Mint: Nabisco Chocolate Wafers (from Safeway in the cookie isle) and Mint Chip Ice Cream.
b. Triple Chocolate Chip Cookie: Chocolate and Cookie Dough Ice Cream and Chocolate Chip Cookies.
c. Strawberry Shortcake: Sugar Cookies, Strawberry Ice Cream and Fresh Strawberries on top - YUM!
d. Birthday Cookie: Chocolate or Sugar Cookies with Cake Batter Ice Cream and then roll the Ice Cream center in Cake Sprinkles.
e. Peanut Butter Delight: Peanut Butter Cookies and Chocolate Peanut Butter Ice Cream and dunk them in Carmel.
f. Cinnamon Sweet: Apple Pie Ice Cream with Snickerdoodle Cookies.
g. Death By Chocolate: Double Chocolate Chunk Cookie, Dark Chocolate Ice Cream and dunk it in Hot Fudge.
h. Jamocha Java: Chocolate Cookie with Jamocha Almond Fudge or Coffee Ice Cream
g. Va Va Vanilla: Vanilla Ice Cream and Sugar Cookies with White Chocolate
